This recipe takes your quesadilla to the next level with a crispy, golden-brown cheese crust on the outside, in addition to the melty cheese inside. It’s a delicious hack for a more indulgent and satisfying quesadilla experience.

- 2 large flour tortillas
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
- 2 tablespoons butter
- Optional fillings: cooked chicken, beef, beans, sautéed vegetables
Instructions
- Lay one tortilla flat. Sprinkle half of the shredded cheeses evenly over the tortilla, leaving a small border.
- If using, add your desired fillings over the cheese.
- Top with the second tortilla.
- In a non-stick skillet over medium heat, melt 1 tablespoon of butter.
- Carefully place the quesadilla in the skillet.
- Cook for 3-4 minutes, until the bottom is golden brown and the cheese begins to melt.
- Slide the quesadilla onto a plate. Add the remaining 1 tablespoon of butter to the skillet.
- Invert the quesadilla into the skillet so the uncooked side is now on the bottom.
- Cook for another 3-4 minutes, or until the second side is golden brown and crispy, and the cheese is fully melted.
- Remove from skillet, let it cool slightly, then cut into wedges and serve immediately.
Notes
- For an extra crispy crust, ensure your skillet is hot before adding the quesadilla.
- Don’t overcrowd the quesadilla with fillings, as this can prevent even cooking.
