Description

Enjoy a delicious and satisfying grilled cheese sandwich without the bread! This recipe uses cauliflower to create a cheesy, flavorful experience that’s perfect for a low-carb or gluten-free lifestyle.

Ingredients

Scale
  • 1 medium head of cauliflower, cut into florets
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese (or your favorite cheese blend)
  • 1/4 cup almond flour (optional, for binding)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Butter or oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Steam or boil the cauliflower florets until tender, about 10-15 minutes. Drain them very well, pressing out as much water as possible.
  3. Mash the cooked cauliflower until it forms a coarse meal.
  4. In a bowl, combine the mashed cauliflower, eggs, Parmesan cheese, cheddar cheese, almond flour (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
  5. Form the mixture into two thick patties, similar in size to bread slices.
  6. Heat butter or oil in a non-stick skillet over medium heat.
  7. Carefully place the cauliflower patties in the skillet and cook for 5-7 minutes per side, until golden brown and slightly crispy.
  8. For extra cheesiness, you can add a slice of cheese on top of one patty during the last minute of cooking and cover the pan briefly.
  9. Serve immediately and enjoy your cheesy cauliflower grilled cheese!

Notes

  • Ensure the cauliflower is well-drained to prevent a soggy sandwich.
  • Adjust seasonings to your preference.
  • Feel free to experiment with different types of cheese.
