  • 2 cups cooked shredded chicken
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • 1 (10 ounce) can red enchilada sauce
  • 8 (6 inch) corn tortillas
  • 1/4 cup chopped fresh cilantro (for garnish)
  • 1/4 cup sour cream (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the shredded chicken with 1/2 cup of Monterey Jack cheese and 1/2 cup of Cheddar cheese. Mix well.
  3. Warm the tortillas slightly to make them pliable. You can do this by wrapping them in a damp paper towel and microwaving for 30 seconds, or by briefly heating them in a dry skillet.
  4. Spoon about 2 tablespoons of the chicken and cheese mixture into the center of each tortilla.
  5. Roll up the tortillas tightly and place them seam-side down in a 9×13 inch baking dish.
  6. Pour the enchilada sauce evenly over the rolled enchiladas.
  7. Sprinkle the remaining Monterey Jack and Cheddar cheeses over the top.
  8. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the sauce is heated through.
  9. Garnish with fresh cilantro and a dollop of sour cream before serving.

Notes

  • For extra flavor, you can add a pinch of cumin or chili powder to the chicken mixture.
  • If you prefer a spicier enchilada, use a hot enchilada sauce or add a pinch of cayenne pepper to the sauce.
