  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups sliced yellow squash (about 1.5 pounds)

  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded Gruyere cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/4 cup heavy cream
  • 1 tablespoon all-purpose flour
  • 1/4 cup breadcrumbs
  • 1 tablespoon melted butter


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the sliced squash to the skillet. Season with salt, pepper, and nutmeg. Cook, stirring occasionally, until the squash is tender-crisp, about 8-10 minutes.
  4. In a large bowl, combine the cooked squash mixture with 1/2 cup cheddar cheese, 1/4 cup Monterey Jack cheese, and 1/4 cup Gruyere cheese.
  5. In a small saucepan, whisk together the milk, heavy cream, and flour until smooth. Cook over medium heat, stirring constantly, until the sauce thickens slightly.
  6. Pour the thickened sauce over the squash and cheese mixture. Stir gently to combine everything.
  7. Pour the mixture into the prepared baking dish, spreading it evenly.
  8. In a small bowl, combine the breadcrumbs and melted butter. Sprinkle this mixture evenly over the top of the casserole.
  9. Top with the remaining 1/2 cup cheddar cheese, 1/4 cup Monterey Jack cheese, and 1/4 cup Gruyere cheese. Sprinkle the Parmesan cheese over the top.
  10. Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden brown. Let it rest for a few minutes before serving.

Notes

  • For an extra gooey texture, you can add a layer of cream cheese to the casserole before topping with the breadcrumbs and cheese.
