Description

Make this simple, one-pan dish combining seasoned ground beef, crispy potatoes, and melted cheese for a quick weeknight dinner.


Ingredients

  • 1.5 lb Yukon Gold potatoes, cubed
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning mix
  • 1 cup water
  • 1 cup shredded Mexican blend cheese
  • 1/2 cup sour cream, for topping
  • 1/4 cup chopped fresh cilantro, for topping


Instructions

  1. Toss the cubed potatoes with olive oil and spread them in a single layer on a large, oven-safe skillet or baking sheet.
  2. Bake the potatoes at 400°F (200°C) for 15 minutes until they start to brown.
  3. While potatoes bake, brown the ground beef in a separate skillet over medium heat. Drain any excess fat.
  4. Stir the taco seasoning and water into the cooked ground beef. Simmer for 5 minutes until the sauce thickens slightly.
  5. Remove the potatoes from the oven. Spread the seasoned ground beef mixture evenly over the potatoes in the skillet.
  6. Sprinkle the shredded cheese over the beef and potato mixture.
  7. Return the skillet to the oven and bake for another 5 to 7 minutes, or until the cheese is fully melted and bubbly.
  8. Remove from the oven. Top with sour cream and fresh cilantro before serving.

Notes

  • For a vegetarian option, substitute the ground beef with 1 can (15 oz) of rinsed and drained black beans mixed with the taco seasoning.
  • You can use pre-cooked or frozen hash browns instead of fresh potatoes to reduce prep time.
