- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup chopped almonds
- 1/4 cup dried cherries
- 2 tablespoons chia seeds
- 1/4 teaspoon salt
- 1/4 cup almond butter
- 3 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, combine rolled oats, almond flour, chopped almonds, dried cherries, chia seeds, and salt.
- In a separate small bowl, whisk together almond butter, honey or maple syrup, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until everything is well combined.
- Press the mixture evenly into the prepared baking pan.
- Bake for 15-20 minutes, or until golden brown around the edges.
- Let cool completely in the pan before cutting into bars.
Notes
- For firmer bars, you can add an extra tablespoon of almond butter or honey.
- Store bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
- Feel free to add other nuts or dried fruits like walnuts or cranberries.
