Instructions

  1. Submerge the chicken pieces in pickle brine and refrigerate for at least 1 hour, or up to 4 hours.

  3. In another shallow dish, whisk together milk and egg.
  4. Remove chicken from pickle brine and pat dry with paper towels.
  5. Dip each chicken piece first into the milk mixture, letting any excess drip off, then dredge it in the flour mixture, ensuring it’s fully coated.
  6. Place coated chicken on a plate and repeat the dipping and dredging process for a double coating.
  7. Heat about 2 inches of vegetable oil in a large skillet or Dutch oven to 350°F (175°C).
