  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces

  • 2 tablespoons vegetable oil, divided
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup shredded carrots
  • 1 cup sliced mushrooms
  • 1 cup chopped green cabbage
  • 1 cup broccoli florets
  • 1/2 cup chicken broth
  • 1/4 cup low sodium soy sauce (for sauce)
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 2 green onions, sliced (for garnish)


Instructions

  1. Cook the egg noodles according to package directions until tender but still firm. Drain them well and set aside.
  2. In a bowl, toss the cut chicken pieces with 1 tablespoon of soy sauce and cornstarch. Let it sit for 5 minutes.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir fry until cooked through and lightly browned, about 4-5 minutes. Remove the chicken from the skillet and set it aside.
  4. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced onion and stir fry for 1 minute until slightly softened.
  5. Add the minced garlic, carrots, mushrooms, cabbage, and broccoli to the skillet. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
  6. While the vegetables cook, whisk together the chicken broth, 1/4 cup soy sauce, oyster sauce, brown sugar, sesame oil, and ground ginger in a small bowl to create the savory chow mein sauce.
  7. Pour the sauce mixture over the vegetables in the skillet. Bring the sauce to a simmer.
  8. Add the cooked noodles and the reserved chicken back into the skillet. Toss everything together gently until the noodles and chicken are fully coated with the sauce and heated through, about 2 minutes.
  9. Remove from heat. Serve immediately, garnished with sliced green onions for that authentic Chinese chow mein flavor.
