Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the ground chicken, Marsala wine, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Mix gently until just combined. Do not overmix.
- Form the mixture into uniform meatballs, about 1.5 inches in diameter.
- Heat the olive oil in an oven-safe skillet over medium-high heat.
- Sear the meatballs on all sides until lightly browned.
- Add the chopped mushrooms, onion, and minced garlic to the skillet with the meatballs. Cook for 2-3 minutes until softened.
- Pour the remaining Marsala wine over the meatballs and vegetables.
- Transfer the skillet to the preheated oven.
- Bake for 15-20 minutes, or until the meatballs are cooked through and the sauce has thickened.
- Garnish with fresh parsley before serving.

- For a richer sauce, you can add a splash of heavy cream in the last few minutes of baking.
