Description
Make restaurant-style Chicken Marsala quickly with a rich, creamy mushroom wine sauce. This recipe is perfect for an impressive weeknight dinner.

- 4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 ounces cremini mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup Marsala wine
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 1 tablespoon fresh parsley, chopped
Instructions
- Place flour, salt, and pepper in a shallow dish. Dredge each chicken cutlet in the flour mixture, shaking off excess.
- Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook for 3 to 4 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside.
- Add sliced mushrooms to the same skillet. Sauté for 5 to 7 minutes until they release their liquid and brown. Add minced garlic and cook for 1 minute until fragrant.
- Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Let the wine reduce by half, about 3 minutes.
- Stir in the chicken broth and bring the mixture to a simmer. Cook for 2 minutes until the sauce slightly thickens.
- Reduce the heat to low. Stir in the heavy cream until the sauce is smooth and creamy. Taste and adjust seasoning if needed.
- Return the cooked chicken to the skillet. Spoon the sauce over the chicken and let it warm through for 1 minute.
- Garnish with fresh parsley before serving.
Notes
- Serve this dish over mashed potatoes or egg noodles to soak up the sauce.
- For a deeper flavor, use a good quality Marsala wine; cooking wine will not give the same result.
- If you prefer a thinner sauce, reduce the amount of heavy cream slightly or add a splash more broth.
