Classic Creamy 30-Minute Chicken Marsala

Description

Make restaurant-style Chicken Marsala quickly with a rich, creamy mushroom wine sauce. This recipe is perfect for an impressive weeknight dinner.

  • 4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup Marsala wine
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Place flour, salt, and pepper in a shallow dish. Dredge each chicken cutlet in the flour mixture, shaking off excess.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook for 3 to 4 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside.
  3. Add sliced mushrooms to the same skillet. Sauté for 5 to 7 minutes until they release their liquid and brown. Add minced garlic and cook for 1 minute until fragrant.
  4. Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Let the wine reduce by half, about 3 minutes.
  5. Stir in the chicken broth and bring the mixture to a simmer. Cook for 2 minutes until the sauce slightly thickens.
  6. Reduce the heat to low. Stir in the heavy cream until the sauce is smooth and creamy. Taste and adjust seasoning if needed.
  7. Return the cooked chicken to the skillet. Spoon the sauce over the chicken and let it warm through for 1 minute.
  8. Garnish with fresh parsley before serving.

Notes

  • Serve this dish over mashed potatoes or egg noodles to soak up the sauce.
  • For a deeper flavor, use a good quality Marsala wine; cooking wine will not give the same result.
  • If you prefer a thinner sauce, reduce the amount of heavy cream slightly or add a splash more broth.
