  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup small pasta, such as ditalini or small shells
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish (optional)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in minced garlic, oregano, basil, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in chicken broth and crushed tomatoes. Bring to a simmer.
  5. Add the browned chicken and pasta to the pot. Cook according to pasta package directions, or until pasta is tender and chicken is cooked through.
  6. Stir in mozzarella and Parmesan cheeses until melted and combined.
  7. Ladle soup into bowls. Garnish with fresh basil leaves if desired.

Notes

  • For a richer flavor, you can use rotisserie chicken instead of cooking fresh chicken breasts.
  • Feel free to add other vegetables like spinach or zucchini during the last few minutes of cooking.
  • If you prefer a thicker soup, you can mash some of the cooked pasta against the side of the pot.
