- 4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups panko breadcrumbs
- 1/2 cup grated Parmesan cheese, plus 1/4 cup for topping
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 cups marinara sauce
- 8 ounces fresh mozzarella cheese, sliced

Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
- Set up a dredging station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. In the third dish, combine panko breadcrumbs, 1/2 cup Parmesan cheese, garlic powder, oregano, salt, and pepper.
- Dredge each pounded chicken breast first in the flour, shaking off excess. Dip it into the egg mixture, letting excess drip off. Finally, press the chicken firmly into the breadcrumb mixture to coat both sides completely.
- Heat the olive oil in a large skillet over medium-high heat. Sear the breaded chicken for 2 minutes per side until golden brown. This step builds crispiness before baking.
- Arrange the seared chicken cutlets on the prepared baking sheet. Spoon about 1/4 cup of marinara sauce over each piece of chicken.
- Top each cutlet with slices of mozzarella cheese and sprinkle the remaining 1/4 cup of Parmesan over the cheese.
- Bake for 12 to 15 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the cheese is melted and bubbly.
- Garnish with fresh basil before serving. Serve immediately over pasta or with a side salad.

- For extra crispiness, lightly spray the tops of the breaded chicken with cooking spray before baking.
