  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon Kashmiri chili powder (or paprika for less heat)
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 1 (14.5 ounce) can crushed tomatoes
  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • 1 teaspoon sugar
  • Salt to taste
  • 12 slider buns
  • Butter, softened (for brushing)
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. In a bowl, combine the chicken pieces with yogurt, lemon juice, ginger garlic paste, turmeric, garam masala, cumin, coriander, and chili powder. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. Heat the vegetable oil in a skillet over medium-high heat. Add the marinated chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
  3. In the same skillet, add the chopped onion and cook until soft, about 5 minutes.
  4. Stir in the crushed tomatoes, sugar, and salt. Simmer the sauce for 10 minutes, allowing the flavors to blend.
  5. Return the cooked chicken to the skillet. Stir in the heavy cream. Cook for another 5 minutes, stirring gently.
  6. Slice the slider buns in half horizontally. Lightly brush the tops and bottoms with softened butter.
  7. Place the bottom halves of the buns on a baking sheet. Spoon the chicken tikka masala mixture evenly over the bottom buns.
  8. Place the top halves of the buns over the filling.
  9. Bake at 350°F (175°C) for 8-10 minutes, or until the buns are lightly golden and heated through.
  10. Garnish generously with fresh cilantro before serving immediately.

Notes

  • For extra flavor, grill or broil the marinated chicken before adding it to the sauce.
  • If you prefer a tangier sauce, add a splash of vinegar at the end.
  • Make sure your yogurt is full-fat for the best texture in the marinade.
