  • 1 ripe mango, peeled and diced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon sriracha (optional)
  • 8-10 large lettuce leaves (butter or iceberg recommended)
  • Optional toppings: chopped peanuts, thinly sliced red onion, extra cilantro


Instructions

  1. In a bowl, toss the chicken pieces with olive oil, chili powder, cumin, salt, and pepper.
  2. Heat a skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes.
  3. While the chicken is cooking, prepare the mango salsa. In a separate bowl, combine the diced mango, chopped cilantro, lime juice, honey, soy sauce, and sriracha (if using). Stir well.
  4. Once the chicken is cooked, add the mango salsa to the skillet. Stir to combine and cook for another 1-2 minutes until heated through.
