- 2 tablespoons vegetable oil, divided
- 4 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon sugar
- 1/2 teaspoon sesame oil
- Pinch of red pepper flakes (optional)
- 2 tablespoons water or vegetable broth
Instructions
- Wash and thoroughly dry the green beans. This step is key for getting a good char.
- Heat 1 tablespoon of vegetable oil in a large wok or heavy skillet over high heat until it just begins to smoke.
- Add the green beans to the hot pan in a single layer if possible. Cook, stirring occasionally, for 4 to 6 minutes until the beans blister and char in spots. If your pan is crowded, cook in batches.
- Remove the beans from the pan and set them aside.
- Reduce the heat to medium-high. Add the remaining 1 tablespoon of oil to the pan. Add the minced garlic and grated ginger. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
- Quickly stir in the soy sauce, sugar, sesame oil, and red pepper flakes, if using. Let the sauce bubble for a few seconds.
- Return the blistered green beans to the pan. Add the water or vegetable broth. Toss everything together quickly for about 1 minute until the sauce thickens slightly and coats the beans.
