- 1.5 lbs boneless, skinless chicken thighs
- 1 tbsp chili powder
- 2 tsp cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper (optional)
- Salt and black pepper to taste
- 2 tbsp olive oil
- 1/2 cup chicken broth
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup cooked white rice
- 1 cup cooked brown rice
- 1 cup shredded lettuce
- 1/2 cup corn kernels (canned or frozen, thawed)
- 1/2 cup salsa
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup shredded Monterey Jack cheese
- 1/4 cup pico de gallo
- Lime wedges for serving
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss chicken thighs with chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken thighs for 2-3 minutes per side until browned.
- Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
- Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove chicken from skillet and let it rest for 5 minutes. Shred or dice the chicken.
- Assemble your burrito bowls: Start with a base of white and brown rice.
- Top with shredded chicken, black beans, shredded lettuce, corn, salsa, pico de gallo, cilantro, sour cream or Greek yogurt, and shredded cheese.
- Serve immediately with lime wedges on the side.

- Feel free to customize your bowl with your favorite toppings like avocado, guacamole, or pickled jalapeños.
- For a spicier kick, add more cayenne pepper to the chicken seasoning.
- If you don’t have chicken thighs, boneless, skinless chicken breasts can be used, but adjust cooking time as needed.
