Description

  • 1 tbsp chili powder
  • 2 tsp cumin

  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 1/2 cup chicken broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cooked white rice
  • 1 cup cooked brown rice
  • 1 cup shredded lettuce
  • 1/2 cup corn kernels (canned or frozen, thawed)
  • 1/2 cup salsa
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup shredded Monterey Jack cheese
  • 1/4 cup pico de gallo
  • Lime wedges for serving


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss chicken thighs with chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken thighs for 2-3 minutes per side until browned.
  4. Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
  5. Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Remove chicken from skillet and let it rest for 5 minutes. Shred or dice the chicken.
  7. Assemble your burrito bowls: Start with a base of white and brown rice.
  8. Top with shredded chicken, black beans, shredded lettuce, corn, salsa, pico de gallo, cilantro, sour cream or Greek yogurt, and shredded cheese.
  9. Serve immediately with lime wedges on the side.
