- 6 bone-in, skin-on chicken thighs
- 1/4 cup honey
- 2 tablespoons adobo sauce from canned chipotles in adobo
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with foil for easy cleanup.
- In a small bowl, whisk together the honey, adobo sauce, olive oil, smoked paprika, garlic powder, salt, and pepper to create the glaze.
- Pat the chicken thighs dry with paper towels. This helps the skin crisp.
- Place the chicken thighs on the prepared baking sheet.
- Brush half of the chipotle honey glaze evenly over the tops of the chicken thighs.
- Bake for 20 minutes.
- Remove the pan from the oven and brush the remaining glaze over the chicken.
- Return to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is browned and slightly caramelized.
- Let the chicken rest for 5 minutes before serving.
Notes
- If you prefer grilling, cook over medium heat, turning occasionally, until cooked through, about 20-25 minutes total, applying the glaze during the last 5 minutes of cooking.
- Adjust the amount of adobo sauce to control the heat level.
