Ingredients

  • 2 ripe avocados
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup maple syrup or other sweetener
  • 1/4 cup plant-based milk (almond, soy, or oat)
  • 1 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Halve the avocados and remove the pits. Scoop the flesh into a food processor or high-powered blender.
  2. Add the cocoa powder, maple syrup, plant-based milk, vanilla extract, and salt to the food processor.
  3. Process until the mixture is completely smooth and creamy, scraping down the sides as needed. This may take a few minutes to ensure no avocado chunks remain.
  4. Taste and adjust sweetness if necessary.
  5. Spoon the mousse into individual serving dishes or a single bowl.
  6. Cover and refrigerate for at least 30 minutes to allow it to firm up and flavors to meld.
  7. Serve chilled. Optional toppings include fresh berries, chopped nuts, or a sprinkle of cocoa powder.
