Ingredients

- 2 ripe avocados
- 1/2 cup unsweetened cocoa powder
- 1/2 cup maple syrup or other sweetener
- 1/4 cup plant-based milk (almond, soy, or oat)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Halve the avocados and remove the pits. Scoop the flesh into a food processor or high-powered blender.
- Add the cocoa powder, maple syrup, plant-based milk, vanilla extract, and salt to the food processor.
- Process until the mixture is completely smooth and creamy, scraping down the sides as needed. This may take a few minutes to ensure no avocado chunks remain.
- Taste and adjust sweetness if necessary.
- Spoon the mousse into individual serving dishes or a single bowl.
- Cover and refrigerate for at least 30 minutes to allow it to firm up and flavors to meld.
- Serve chilled. Optional toppings include fresh berries, chopped nuts, or a sprinkle of cocoa powder.

- Ensure avocados are very ripe for the creamiest texture.
- Adjust the amount of sweetener to your preference.
- Any plant-based milk can be used.
- For a richer flavor, you can add a tablespoon of melted dark chocolate.
