Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat the eggs and sugar until well combined.
  4. Stir in the vegetable oil and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the grated zucchini and chocolate chips.
  7. Pour the batter into the prepared loaf pan and sprinkle with additional chocolate chips if desired.
  8. Bake for 50-65 minutes, or until a wooden skewer inserted into the center comes out clean.
