  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup sweetened shredded coconut
  • 1/4 cup sweetened condensed milk
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil


Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together the flour, sugar, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Press this crumb mixture firmly into the bottom of the prepared pan to form the crust.
  5. Bake the crust for 12-15 minutes, or until the edges are lightly golden.
  6. While the crust bakes, mix the shredded coconut and sweetened condensed milk in a separate bowl until well combined.
  7. Remove the crust from the oven and spread the coconut mixture evenly over the hot crust.
  8. Return the pan to the oven and bake for another 15-18 minutes, until the coconut topping is lightly golden brown.
  9. Let the bars cool completely in the pan on a wire rack.
  10. Once cool, melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  11. Pour the melted chocolate over the cooled coconut layer and spread it evenly.
  12. Refrigerate the bars for at least 1 hour, or until the chocolate is set.
  13. Lift the bars out using the parchment paper overhang and cut into squares before serving. Store leftovers in the refrigerator.
