- Remove the saucepan from the heat. Add the chopped chocolate and let it sit for 1 minute to soften, then whisk until smooth.
- In a separate bowl, whisk together the egg yolks, vanilla extract, and salt.
- Slowly temper the egg yolks by gradually whisking about half of the hot cream mixture into the egg yolks. This prevents the eggs from scrambling.
- Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture. Whisk until well combined.
- Strain the custard mixture through a fine-mesh sieve into a clean bowl or directly into the prepared ramekins, if desired, to ensure a perfectly smooth texture.
- Pour hot water into the baking dish around the ramekins, filling it about halfway up the sides of the ramekins. This water bath helps the custards cook evenly and gently.
- Bake for 30-35 minutes, or until the edges are set and the centers are still slightly jiggly.
- Carefully remove the ramekins from the water bath and let them cool on a wire rack for about 15 minutes.
- Cover the ramekins with plastic wrap and chill in the refrigerator for at least 4 hours, or until firm.
