Description

Whip up these delightful chocolate protein muffins, perfect for a healthy snack or breakfast. They’re packed with protein and flavor, using cocoa powder and protein powder to create a satisfying treat. You’ll learn how to balance the sweetness and rich chocolate taste for your perfect muffin.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 scoop (about 30g) chocolate protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, cocoa powder, protein powder, baking soda, baking powder, and salt.
  3. In a separate medium bowl, whisk together the granulated sugar, brown sugar, applesauce, milk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. If using, gently fold in the chocolate chips.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer chocolate flavor, you can use dark cocoa powder.
  • Adjust the sugar to your preference; you can reduce it slightly if your protein powder is already sweetened.
  • Feel free to add nuts or berries for extra texture and flavor.
