  • 1/2 cup unsalted butter, cut into pieces
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs

  • Vegetable oil, for frying
  • For the Chocolate Sauce:
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream


Instructions

  1. In a medium saucepan, combine water, butter, and salt. Bring to a rolling boil over medium heat.
  2. Remove the saucepan from heat. Add the flour all at once and stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.
  3. Return the saucepan to low heat and cook, stirring constantly, for 1 minute to dry out the dough.
  4. Transfer the dough to a mixing bowl. Let it cool for 5 minutes.
  5. Add the eggs one at a time, beating well after each addition until the dough is smooth and glossy.
  6. In a shallow dish, combine 1 teaspoon granulated sugar and 1 teaspoon cinnamon.
  7. Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
  8. Spoon or pipe small portions of the dough into the hot oil. Fry in batches, turning occasionally, until golden brown and puffed, about 3-4 minutes.
  9. Remove the churro bites with a slotted spoon and drain on paper towels.
  10. Immediately toss the warm churro bites in the cinnamon-sugar mixture.
  11. For the chocolate sauce: In a microwave-safe bowl, combine chocolate chips and heavy cream. Microwave in 30-second intervals, stirring between each, until smooth and melted. Alternatively, heat gently in a saucepan over low heat, stirring until smooth.
  12. Serve the churro bites warm with the chocolate dipping sauce.

  • You can pipe the churro dough using a star-tipped pastry bag for a classic churro shape.
  • If you don’t have a thermometer, a small piece of dough should sizzle immediately when dropped into the oil.
