  • 3 and 1/2 teaspoons baking powder

  • 1 and 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons butter, melted
  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/2 teaspoon vanilla extract


Instructions

  1. In a large bowl, sift together the flour, baking powder, salt, and 1 tablespoon of white sugar.
  2. Make a well in the center and pour in the milk, egg, and 3 tablespoons of melted butter. Mix until just combined; a few lumps are okay.
  3. In a small bowl, stir together the 1/4 cup granulated sugar and 1 tablespoon cinnamon.
  4. Heat a lightly oiled griddle or frying pan over medium-high heat.
  5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  6. Immediately sprinkle about 1 teaspoon of the cinnamon-sugar mixture over each pancake.
  7. Add the remaining 2 tablespoons of melted butter to the cinnamon-sugar mixture.
  8. Drizzle this mixture over the pancakes.
  9. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  10. While the pancakes cook, whisk together the powdered sugar, 1-2 tablespoons of milk, and vanilla extract until smooth for the icing. Add more milk if needed to reach desired drizzling consistency.
  11. Serve the pancakes warm with the icing drizzled over the top.
