- 1 teaspoon ground cinnamon
- 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, 1 1/2 teaspoons of cinnamon, nutmeg, and cloves.
- In a large bowl, whisk together the granulated sugar and vegetable oil. Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the grated zucchini.
- Prepare the streusel topping: In a separate bowl, combine the flour, brown sugar, and remaining 1/2 teaspoon of cinnamon. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Pour half of the zucchini bread batter into the prepared loaf pan. Sprinkle half of the streusel topping over the batter.
- Pour the remaining batter over the streusel, then top with the remaining streusel mixture.
- Bake for 50-65 minutes, or until a wooden skewer inserted into the center comes out clean. If the topping begins to brown too quickly, loosely tent the pan with aluminum foil.
- Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
