Instructions

  1. In a large bowl, combine the warm water and 1 teaspoon granulated sugar. Sprinkle the yeast over the top and let it sit for 5-10 minutes until foamy.
  2. Add the flour, 1 teaspoon salt, and 2 tablespoons melted butter to the yeast mixture. Stir until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  6. In a shallow dish, combine the ½ cup granulated sugar and 2 teaspoons cinnamon for the coating.
  7. In a large pot or Dutch oven, bring 8 cups of water and the baking soda to a rolling boil.
  8. Punch down the risen dough and divide it into 4 equal portions.
  9. Roll each portion into a rope about ½ inch thick. Cut the ropes into 1-inch pieces.
  10. Working in batches, boil the pretzel bites in the baking soda water for 20-30 seconds each.
