Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup baking soda
  • 1 large egg, beaten (for egg wash)
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter, melted (for cinnamon-sugar coating)


Instructions

  1. In a large bowl, combine warm water, yeast, and 1 tablespoon sugar. Let stand for 5-10 minutes until foamy.
  2. Stir in 1 teaspoon salt and 3 1/2 cups flour until a shaggy dough forms.
  3. Turn dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  5. Punch down dough and turn onto a lightly floured surface. Roll into a long rope and cut into bite-sized pieces.
  6. In a large pot, bring 8 cups of water and baking soda to a rolling boil.
  7. Carefully drop pretzel bites into boiling water, 5-10 at a time, for 30 seconds per side.
  8. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.
  9. Brush pretzel bites with the beaten egg wash.
  10. In a small bowl, combine 1/2 cup sugar and cinnamon.
  11. Dip each pretzel bite into the melted butter, then roll in the cinnamon-sugar mixture.
  12. Bake at 400°F (200°C) for 10-12 minutes, or until golden brown.

  • For a chewier pretzel, you can increase the baking soda in the boiling water.
