  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 1/2 cups warm water (105-115°F)
  • 1 teaspoon sugar
  • 4 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1/4 cup baking soda
  • 1 large egg, beaten
  • 1/2 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 1/2 cup unsalted butter, melted


Instructions

  1. In a large bowl, dissolve yeast and 1 teaspoon of sugar in warm water. Let stand for 5-10 minutes until foamy.
  2. Add flour and salt to the yeast mixture. Mix until a shaggy dough forms.
  3. Turn dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Place dough in a greased bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat oven to 425°F (220°C). Line baking sheets with parchment paper.
  6. In a shallow dish, combine 1/2 cup granulated sugar and 2 tablespoons cinnamon.
  7. In a separate shallow dish, place the beaten egg.
  8. In a small bowl, melt the 1/2 cup butter.
  9. Punch down the risen dough. Divide it into small pieces.
  10. Roll each piece into a bite-sized ball or shape into a pretzel.
  11. Dip each pretzel bite into the beaten egg, then into the cinnamon-sugar mixture to coat evenly.
  12. Place coated pretzel bites on the prepared baking sheets.
  13. Bake for 10-12 minutes, or until golden brown.
  14. While still warm, brush each pretzel bite with melted butter.
