  • 3 large ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (for batter)
  • 1/2 cup brown sugar (for swirl)
  • 1 tablespoon ground cinnamon (for swirl)
  • 2 tablespoons melted butter (for swirl)


Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, melted butter, granulated sugar, egg, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  5. Stir 1 teaspoon of ground cinnamon into the batter.
  6. In a small bowl, mix the brown sugar, 1 tablespoon of ground cinnamon, and 2 tablespoons of melted butter until crumbly. This is your swirl mixture.
  7. Pour about two-thirds of the banana bread batter into the prepared loaf pan.
  8. Sprinkle the cinnamon swirl mixture evenly over the batter.
  9. Pour the remaining batter over the swirl mixture. If desired, gently swirl the top with a knife.
  10. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • Use very ripe, spotty bananas for the best flavor and moisture.
  • For a richer swirl, you can gently fold the swirl mixture into the batter slightly before pouring the final third of the batter on top.
