  • Author: Alexander Knight

Description

Classic baked beans recipe.

Ingredients

Scale
  • 1 lb dried navy beans
  • 1 large onion, chopped
  • 1/2 cup molasses
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 tablespoons Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 slices bacon, cut into 1-inch pieces
  • 6 cups water, or as needed

Instructions

  1. Rinse the navy beans and soak them overnight in a large pot of water.
  2. Drain the soaked beans and place them in a large pot. Cover with fresh water and bring to a boil. Reduce heat and simmer for 1 hour, or until beans are tender but not mushy.
  3. Preheat oven to 300°F (150°C).
  4. Drain the cooked beans, reserving the cooking liquid.
  5. In a large oven-safe pot or Dutch oven, combine the drained beans, chopped onion, molasses, brown sugar, ketchup, Dijon mustard, salt, and pepper.
  6. Stir to combine.
  7. Nestle the bacon pieces into the beans.
  8. Add enough reserved cooking liquid to cover the beans.
  9. Cover the pot and bake for 2-3 hours, or until the beans are tender and the sauce has thickened. Stir occasionally.
  10. If the beans become dry during baking, add more reserved cooking liquid.
  11. Remove the lid for the last 30 minutes of baking if you want the top to brown slightly.
  12. Serve hot.

Notes

  • Soaking the beans overnight helps them cook more evenly.
  • You can adjust the sweetness by adding more or less brown sugar and molasses.
  • For a smoky flavor, add a teaspoon of liquid smoke.
