Ingredients

  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, salt, and espresso powder (if using).
  3. Add the eggs, buttermilk, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until well combined.
  4. Carefully stir in the boiling water. The batter will be thin; this is normal.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  8. Once cooled, frost with your favorite chocolate frosting.

Notes

  • For an even richer chocolate flavor, use dark cocoa powder.
  • Ensure your buttermilk and milk are at room temperature for best results.
  • Do not overmix the batter once the wet ingredients are added.
