Description

Whip up these delicious classic protein muffins for a satisfying, high-protein snack or breakfast. Packed with protein powder, Greek yogurt, and eggs, they’re perfect for boosting your daily protein intake and keeping you feeling full. Enjoy their wonderfully moist texture!

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup protein powder (whey or plant-based)
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup Greek yogurt
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, protein powder, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together the Greek yogurt, milk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra moisture, you can add 1/4 cup of unsweetened applesauce to the wet ingredients.
  • Feel free to add mix-ins like berries, chocolate chips, or nuts to the batter before baking.
  • Ensure your protein powder is unflavored or a flavor that complements your muffins.
