- 1 tablespoon coconut oil
- 1 large yellow onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 2 teaspoons curry powder
- 1 teaspoon turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 (13.5 ounce) can full-fat coconut milk
- 1 tablespoon lime juice
- Salt and black pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat the coconut oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
- Stir in the minced garlic, ginger, curry powder, turmeric, cumin, and cayenne pepper, if using. Cook for 1 minute until fragrant.
- Add the rinsed red lentils and vegetable broth to the pot. Bring the mixture to a boil.
- Reduce the heat to low, cover, and simmer for 20 to 25 minutes, or until the lentils are tender. Stir occasionally to prevent sticking.
- Pour in the coconut milk and stir well to combine. Let the soup simmer gently for another 5 minutes to heat through. Do not boil once the coconut milk is added.
- Remove the soup from the heat. Stir in the lime juice. Season generously with salt and pepper to your liking.
- Ladle the soup into bowls. Garnish with fresh cilantro, if desired. Enjoy your creation!

- For a smoother texture, you can use an immersion blender to partially blend a portion of the soup before adding the coconut milk.
- Adjust the amount of curry powder or cayenne to control the spice level.
