Description

These coffee cake muffins combine the best of both worlds: a tender, moist muffin with a delightful cinnamon swirl and a quick, easy crumble topping. Perfect for breakfast or a sweet treat.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted


Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. In a small bowl, combine the brown sugar and cinnamon for the swirl.
  6. Spoon half of the muffin batter into the prepared muffin cups.
  7. Sprinkle a portion of the cinnamon-sugar mixture over the batter in each cup.
  8. Spoon the remaining muffin batter over the cinnamon-sugar layer.
  9. For the crumble topping, in a small bowl, combine ½ cup all-purpose flour, ¼ cup packed light brown sugar, ¼ teaspoon ground cinnamon, and 2 tablespoons melted unsalted butter. Mix with a fork until crumbly.
  10. Sprinkle the crumble topping evenly over the muffin batter in each cup.
  11. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  12. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Do not overmix the muffin batter; lumps are okay. Overmixing makes muffins tough.
  • You can prepare the crumble topping ahead of time and store it in the refrigerator.
  • For extra flavor, add a pinch of nutmeg to the cinnamon swirl or crumble.
