Ingredients

  • 1 pound dried noodles (such as spaghetti, linguine, or lo mein noodles)
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup (for vegan)
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons tahini (sesame paste)
  • 2 tablespoons water
  • Chopped scallions, for garnish
  • Toasted sesame seeds, for garnish


Instructions

  1. Cook the noodles according to package directions. Drain and rinse with cold water until completely cool.
  2. In a large bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, minced garlic, and red pepper flakes (if using).
  3. In a separate small bowl, whisk together the tahini and water until smooth and creamy.
  4. Add the tahini mixture to the soy sauce mixture and whisk until well combined and smooth.
  5. Add the cooled noodles to the bowl with the sauce and toss gently until the noodles are evenly coated.
  6. Divide the noodles among serving bowls. Garnish with chopped scallions and toasted sesame seeds.
  7. Serve immediately or chill in the refrigerator for at least 30 minutes before serving for a colder dish.

Notes

  • You can add cooked chicken, shrimp, or tofu for added protein.
  • Feel free to add your favorite vegetables like shredded carrots, cucumber, or bell peppers.
