- 2 butterfly pea flower tea bags
- 1/2 cup granulated sugar
- 1 cup fresh lemon juice (from about 4-5 lemons)
- 3 cups cold water
- Ice cubes
- Lemon slices for garnish (optional)
Instructions
- Boil 1 cup of water and steep the butterfly pea flower tea bags for 5-7 minutes until a deep blue color is achieved. Remove tea bags.
- In a small saucepan, combine the steeped blue tea with granulated sugar. Heat gently, stirring until the sugar is completely dissolved to create a simple syrup. Let it cool.
- In a pitcher, combine the cooled blue simple syrup, fresh lemon juice, and 3 cups of cold water.
- Stir well. The mixture will begin to change color from blue to a purple or pinkish hue as the lemon juice interacts with the butterfly pea flower tea.
- Fill glasses with ice cubes.
- Pour the galaxy lemonade over the ice.
- Garnish with lemon slices if desired.

- For a sweeter drink, add more sugar to the simple syrup.
- For a tarter drink, use less sugar or more lemon juice.
