- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup crumbled cotija cheese (or feta)
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- Pinch of cayenne pepper (optional)
- Salt and pepper to taste
- Optional toppings: diced red onion, jalapeños, avocado
Instructions
- Preheat your oven to 350°F (175°C).
- Spread the tortilla chips evenly on a baking sheet.
- In a medium bowl, combine the black beans, corn, mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, cumin, and cayenne pepper (if using). Mix well.
- Season the mixture with salt and pepper to your liking.
