- 1 (15 ounce) can whole kernel corn, drained
- 1 cup shredded cheddar cheese, divided
- 1 package (8.5 ounces) corn muffin mix (like Jiffy mix)

Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain off any excess grease.
- Stir the cooked beef mixture, cream of mushroom soup, Rotel, black beans, corn, and half (1/2 cup) of the shredded cheddar cheese into the skillet. Mix everything well.
- Spread this beef and bean mixture evenly into the prepared 9×13 inch baking dish.
- Prepare the corn muffin mix according to the package directions, using the required milk, eggs, and oil.
- Pour the prepared cornbread batter evenly over the beef mixture in the baking dish.
- Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
- Remove the casserole from the oven. Sprinkle the remaining 1/2 cup of cheddar cheese over the top. Let it sit for 5 minutes so the cheese melts slightly before serving this hearty ground beef casserole.
Notes
- For an extra layer of flavor, add 1 teaspoon of chili powder and 1/2 teaspoon of cumin to the ground beef mixture while cooking.
