Description

Make this rich, savory, and cheesy Creamy Crack Chicken Gnocchi in one skillet. This recipe delivers ultimate comfort food flavor quickly, perfect for a busy weeknight.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ranch seasoning mix
  • 1 (16 ounce) package shelf-stable potato gnocchi
  • 2 cups chicken broth
  • 4 ounces cream cheese, cut into cubes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 slices bacon, cooked and crumbled (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, salt, pepper, and ranch seasoning. Cook until the chicken is browned on all sides and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  2. Add the uncooked gnocchi and chicken broth to the same skillet. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan. Cook for about 5 minutes, stirring occasionally, until the gnocchi is tender.
  3. Reduce the heat to low. Stir in the cream cheese cubes until they melt completely into the sauce.
  4. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
  5. Return the cooked chicken to the skillet. Stir gently to coat everything in the sauce. If using, stir in the crumbled bacon.
  6. Heat through for 1 to 2 minutes until the sauce is hot. Garnish with fresh parsley before serving.

Notes

  • For a thicker sauce, let the mixture simmer uncovered for an extra minute or two after adding the cream cheese.
  • You can substitute frozen gnocchi, but you may need to add an extra 1/4 cup of broth and increase the cooking time slightly.
  • Use your favorite brand of ranch seasoning mix for the best flavor.
