- 3 large eggs
- 1 tablespoon unsalted butter
- 1 teaspoon crème fraîche or sour cream (optional, for extra creaminess)
- Pinch of salt
- Pinch of black pepper
- 1 teaspoon chopped fresh chives (for garnish)
Instructions
- Crack the eggs into a small saucepan. Do not whisk them yet.
- Place the saucepan over medium-high heat. Add the butter.
- Stir the eggs constantly with a rubber spatula, scraping the bottom and sides of the pan continuously.
- After about 30 seconds, remove the pan from the heat while still stirring for 10 seconds. Return to the heat. Repeat this on-and-off process for 3 to 4 minutes. This controls the cooking temperature.
- When the eggs are mostly cooked but still look slightly wet and creamy (not fully set), remove the pan from the heat permanently.
- Stir in the crème fraîche or sour cream, if using. Season with salt and pepper.
- Serve immediately on toast, garnished with fresh chives.
Notes
- Use a non-stick saucepan for the best results and easiest cleanup.
- Do not overcook; the residual heat will continue to cook the eggs after you remove them from the stove.
- For a richer flavor, use high-quality butter.
