Instructions

  1. Bring the vegetable broth to a boil in a medium saucepan. Slowly whisk in the cornmeal to prevent lumps.
  2. Reduce heat to low and continue stirring until the polenta thickens, about 20-25 minutes. Stir frequently.
  3. While the polenta cooks, heat the olive oil in a separate skillet over medium-high heat.
  4. Add the sliced mushrooms to the skillet. Cook until they release their moisture and begin to brown, about 8-10 minutes.
  5. Add the minced garlic to the mushrooms and cook for 1 minute until fragrant. Season with salt and pepper.
  6. Once the polenta is thick and creamy, remove it from the heat. Stir in the heavy cream and Parmesan cheese (if using). Taste and adjust seasoning.
