Description

Make a rich, savory mushroom sauce from scratch in under 30 minutes. This recipe works well over steak, chicken, pasta, or roasted vegetables.

  • 1 tablespoon olive oil
  • 1 pound cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 cup dry white wine or chicken broth
  • 1 cup heavy cream (or substitute with vegetable broth and 1 tablespoon cornstarch slurry for lighter sauce)
  • 1/2 cup beef or vegetable broth
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon fresh parsley, chopped
  • Salt and black pepper to taste


Instructions

  1. Heat the butter and olive oil in a large skillet over medium-high heat.
  2. Add the sliced mushrooms and cook without stirring for 3 to 4 minutes to allow them to brown. Stir and continue cooking until the mushrooms release their liquid and turn golden brown, about 5 to 7 minutes total.
  3. Add the minced garlic and dried thyme to the skillet. Cook for 1 minute until fragrant.
  4. Pour in the white wine or broth to deglaze the pan, scraping up any browned bits from the bottom. Let the liquid reduce by half, about 2 minutes.
  5. Stir in the heavy cream (or broth/starch mixture) and the beef or vegetable broth. Bring the sauce to a gentle simmer.
  6. Reduce the heat to medium-low and let the sauce simmer for 5 to 8 minutes, stirring occasionally, until it thickens enough to coat the back of a spoon.
  7. Stir in the Worcestershire sauce and Parmesan cheese, if using. Season with salt and pepper to your preference.
  8. Remove from heat and stir in the fresh parsley. Serve immediately over your chosen dish.

Notes

  • For a dairy-free version, substitute the butter with olive oil and use full-fat coconut milk or cashew cream instead of heavy cream. Thicken with a cornstarch or tapioca starch slurry.
  • If you prefer a thicker sauce, increase the simmering time or add another teaspoon of cornstarch mixed with cold water during step 5.
  • This sauce pairs excellently with grilled steak, pan-seared chicken breast, tossed with fettuccine, or spooned over baked potatoes.
