Make a rich and flavorful soup that captures all the tastes of a classic Reuben sandwich in one bowl.

- 1 tablespoon butter
- 1 medium yellow onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups beef broth
- 1 cup sauerkraut, drained and rinsed well
- 1 cup shredded Swiss cheese
- 1 cup cooked corned beef, shredded or diced
- 1/2 cup heavy cream
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- 1/2 cup rye bread croutons, for topping
Instructions
- Melt the butter in a large pot or Dutch oven over medium heat.
- Add the onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste.
- Slowly whisk in the beef broth until the mixture is smooth. Bring the soup to a simmer.
- Stir in the drained sauerkraut, shredded corned beef, Worcestershire sauce, and thyme. Simmer for 15 minutes, allowing the flavors to blend.
- Reduce the heat to low. Stir in the heavy cream. Do not let the soup boil after adding the cream.
- Gradually add the shredded Swiss cheese, stirring until the cheese melts completely and the soup thickens.
- Season with salt and pepper to your taste.
- Ladle the hot soup into bowls and top each serving with rye bread croutons before serving.
Notes
- Rinsing the sauerkraut removes excess brine, which helps control the final salt level of the soup.
- For a thicker soup, you can use a roux made with 2 tablespoons of butter and 2 tablespoons of flour.
- If you do not have cooked corned beef, you can substitute with deli-sliced corned beef, chopped finely.
