Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves, chopped
  • 1 teaspoon sugar
  • Salt and freshly ground black pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in crushed tomatoes and vegetable broth. Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally.
  4. Stir in heavy cream, fresh basil, and sugar. Season with salt and pepper to taste.
  5. Heat through gently, but do not boil.
