- 1 (15 ounce) can diced tomatoes, undrained
- 1/2 cup heavy cream
- 1/4 teaspoon red pepper flakes (optional)

- 1 (9 ounce) package refrigerated cheese tortellini
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Stir in diced tomatoes, heavy cream, and red pepper flakes (if using). Season with salt and pepper. Bring to a simmer.
- Add the tortellini to the skillet. Cook according to package directions, until tender.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Remove from heat and stir in Parmesan cheese. Serve immediately.
Notes
- For a richer flavor, you can add a splash of white wine when simmering the tomatoes.
- Feel free to add cooked chicken or sausage for extra protein.
- If you don’t have fresh spinach, frozen spinach can be used, just make sure to thaw and squeeze out excess water before adding.
