- 2 ripe but firm avocados
- 1 cup all-purpose flour
- 2 large eggs, lightly beaten
- 1 cup panko breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Vegetable oil for frying
Instructions
- Cut the avocados into thick fry shapes, about 1/2 inch thick.
- Set up a dredging station with three shallow dishes.
- Place flour in the first dish.
- Place beaten eggs in the second dish.
- Mix panko breadcrumbs, salt, pepper, and garlic powder in the third dish.
- Dredge each avocado fry first in flour, shaking off excess.
- Dip in the egg mixture, allowing excess to drip off.
- Coat thoroughly in the seasoned panko breadcrumbs.
- Heat about 2 inches of vegetable oil in a deep pan to 350°F (175°C).
- Carefully fry the avocado fries in batches for 1 to 2 minutes, until golden brown and crispy. Do not overcrowd the pan.
- Remove the fries with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Serve immediately.
Notes
- Use avocados that are ripe but still firm enough to hold their shape when cut.
- For a lighter option, you can bake these at 400°F (200°C) for 12-15 minutes, flipping halfway, until golden.
- These fries are best served right away while they are hot and crispy.
- Serve with your favorite dipping sauce, like chipotle aioli or ranch.
