- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper for easy cleanup.
- Pat the cod fillets very dry using paper towels. This step helps achieve crispiness.
- In a small bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper. Mix well.
- Brush the tops of the cod fillets lightly with olive oil.
- Press the panko mixture firmly onto the oiled side of each fillet to create an even crust.
- Place the crusted fillets on the prepared baking sheet.
- Bake for 12 to 15 minutes, or until the fish flakes easily with a fork and the crust is golden brown and crisp. Cooking time depends on the thickness of the fish.
- While the fish bakes, mix the melted butter and lemon juice together in a small dish.
- Remove the cod from the oven. Drizzle the lemon butter mixture over the fish before serving immediately.

- For extra crispiness, you can briefly place the baking sheet under the broiler for the last 1-2 minutes, watching carefully to prevent burning.
