Description

A quick recipe for baking cod fillets with a crunchy panko crust, perfect for a fast weeknight dinner.

Ingredients

Scale
  • 4 (6 ounce) cod fillets, about 1 inch thick
  • 2 tablespoons olive oil
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper for easy cleanup.
  2. Pat the cod fillets very dry using paper towels. This step helps achieve crispiness.
  3. In a small bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper. Mix well.
  4. Brush the tops of the cod fillets lightly with olive oil.
  5. Press the panko mixture firmly onto the oiled side of each fillet to create an even crust.
  6. Place the crusted fillets on the prepared baking sheet.
  7. Bake for 12 to 15 minutes, or until the fish flakes easily with a fork and the crust is golden brown and crisp. Cooking time depends on the thickness of the fish.
  8. While the fish bakes, mix the melted butter and lemon juice together in a small dish.
  9. Remove the cod from the oven. Drizzle the lemon butter mixture over the fish before serving immediately.

Notes

  • For extra crispiness, you can briefly place the baking sheet under the broiler for the last 1-2 minutes, watching carefully to prevent burning.
  • Use firm white fish like haddock or pollock if cod is unavailable.
