Description

Follow this recipe to make extremely crispy oven-roasted potatoes flavored with lemon, oregano, and garlic, achieving a fluffy interior and a crisp exterior.


Ingredients

  • 3 lbs Russet or Yukon Gold potatoes, peeled and cut into 1.5-inch chunks
  • 1/2 cup fresh lemon juice
  • 1/2 cup good quality olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup vegetable or chicken broth (hot)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the cut potatoes in a large bowl.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, salt, and pepper.
  4. Pour the lemon-oil mixture over the potatoes and toss well until every piece is coated. Let this mixture sit for 15 minutes.
  5. Arrange the potatoes in a single layer in a large, sturdy baking dish. Do not overcrowd the pan; use two pans if necessary for maximum crispness.
  6. Pour the hot broth over the potatoes, distributing it evenly around the dish, but try not to pour directly over the top layer of potatoes.
  7. Roast for 30 minutes.
  8. Remove the pan from the oven and carefully turn the potatoes using a spatula. Baste them with some of the pan liquid.
  9. Return to the oven and roast for another 30 to 40 minutes, or until the potatoes are deep golden brown and very crispy. Baste them once more halfway through this second roasting period.
  10. Serve immediately.

Notes

  • For the crispiest results, use starchy potatoes like Russets and do not rinse them after cutting, as the surface starch aids crisping.
  • Do not skip the hot broth; the liquid creates steam that cooks the inside while the high heat crisps the outside.
  • If you prefer an air fryer method, cook in batches at 380°F (195°C) for 20-25 minutes, shaking frequently, using only half the liquid mixture initially.
