Description

Make classic, restaurant-style crispy fried chicken egg rolls at home. This recipe focuses on a flavorful filling and achieving a perfectly golden, crunchy wrapper.

  • 1 pound ground chicken
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced green onions
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 12 egg roll wrappers
  • Vegetable oil for deep frying


Instructions

  1. Cook the chicken: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add ground chicken and cook, breaking it up, until browned. Drain any excess fat.
  2. Sauté aromatics and vegetables: Add garlic and ginger to the skillet and cook for 30 seconds until fragrant. Add cabbage, carrots, and mushrooms. Cook until vegetables soften slightly, about 3 to 4 minutes.
  3. Season the filling: Stir in soy sauce, oyster sauce, sesame oil, and black pepper. Cook for 1 minute more. Remove from heat and stir in green onions. Let the filling cool completely.
  4. Assemble the egg rolls: Place an egg roll wrapper on a clean surface with one corner pointing toward you. Place about 2 tablespoons of cooled filling near the bottom corner.
  5. Fold the wrapper: Fold the bottom corner up over the filling. Fold the left and right corners inward toward the center. Moisten the top edge of the wrapper with a little water. Roll the package up tightly toward the top corner. Seal the edge. Repeat with remaining wrappers and filling.
  6. Fry the egg rolls: Heat 2 to 3 inches of vegetable oil in a deep pot or Dutch oven to 350°F (175°C). Carefully place 3 or 4 egg rolls into the hot oil, ensuring not to overcrowd the pot.
  7. Cook until golden brown and crisp, about 4 to 6 minutes, turning occasionally. Remove with a slotted spoon and drain on a wire rack or paper towels.

Notes

  • For an oven-baked version, preheat your oven to 400°F (200°C). Lightly brush the assembled egg rolls with oil and bake for 15 to 20 minutes, flipping halfway, until golden brown.
  • For an air fryer, spray the egg rolls with oil and cook at 375°F (190°C) for 10 to 12 minutes, flipping halfway.
  • Serve immediately with your favorite sweet and sour or duck sauce.
