Easy Dump and Go Crockpot Chicken Fajitas

Description

Make flavorful, juicy chicken fajitas with minimal effort using your slow cooker. This recipe requires very little prep time, making it perfect for busy weeknights.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 1 packet (1 oz) low sodium fajita seasoning mix
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • Tortillas, for serving
  • Optional toppings: salsa, sour cream, shredded cheese, avocado


Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Layer the sliced onions and bell peppers over the chicken.
  3. In a small bowl, mix the fajita seasoning, cumin, chili powder, and salt. Sprinkle this mixture evenly over the chicken and vegetables.
  4. Pour the chicken broth and olive oil over everything in the slow cooker.
  5. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is cooked through and tender.
  6. Remove the chicken breasts from the slow cooker and place them on a cutting board. Shred the chicken using two forks.
  7. Return the shredded chicken to the slow cooker and stir it into the liquid and vegetables until fully coated.
  8. If you prefer slightly charred edges, transfer the mixture to an oven-safe skillet, spread it out, and broil on high for 3 to 5 minutes, watching closely to prevent burning.
  9. Serve immediately with warm tortillas and your favorite toppings.

Notes

  • For freezer prep, place the raw chicken, sliced vegetables, and dry seasonings into a freezer-safe bag. Add the broth and oil when you are ready to cook in the slow cooker.
  • If you want a thicker sauce, remove the lid for the last 30 minutes of cooking time on high.
  • This recipe is naturally low carb if you skip the tortillas and serve the mixture over lettuce or cauliflower rice.
